Roasted peanut, milk chocolate and raisin from Fazenda Chapada Alta, the Moreira family's farm on the high plateau of Cerrado Mineiro. The cherries dry whole on open patios, which gives a heavy, sweet body with very little acidity. A medium-dark roast (4 of 5) made for the moka pot, the plunger and milk. Whole bean or ground for espresso, filter or plunger, in 250 g, 500 g and 1 kg bags.

About this product
Fazenda Chapada Alta sits on a flat, open plateau in Minas Gerais, where dry winters let coffee dry in the sun without rain on it. The Moreira family picks when most of the cherry on the tree is ripe and spreads it on brick patios for two to three weeks, raking it every hour. That slow, even drying gives this coffee its nutty sweetness and full body.
It is also the base of our blends. Thandi, our head roaster, says a good blend needs a coffee that is sweet and steady, and this is ours.
In the cup
Roasted peanut, milk chocolate, raisin. A heavy, smooth body. The acidity is low and soft, and the finish is long and sweet.

How we brew it
On a 6-cup moka pot:
- Fill the base with hot water from the kettle, up to just below the valve.
- Fill the basket with about 30 g of coffee, ground a little coarser than for espresso. Level it; do not press it down.
- Put the pot on a low to medium heat with the lid open.
- When the coffee turns pale and starts to sputter, take it off the heat and cool the base under a cold tap.
Drink it short, or top it up with hot milk.
