Blueberry, strawberry jam and cocoa from the Hambela Ridge growers' co-op in Guji, southern Ethiopia. The ripe cherries dry whole on raised beds for about three weeks, which gives the cup its fruit, and a light roast (2 of 5) keeps it clean. Sweet as a pour-over, round and juicy as a plunger. Whole bean or ground for espresso, filter or plunger, in 250 g, 500 g and 1 kg bags.

About this product

This is the coffee we pour when someone asks what Ethiopian coffee tastes like. The bag smells of blueberries when it opens, and the cup tastes of jam and cocoa as it cools. Pieter, our green buyer, has bought from the Hambela Ridge growers' co-op for four harvests. About 600 smallholders bring ripe cherry to the co-op's station, where it dries whole on raised beds for 18 to 24 days and is turned by hand through the day.

In the cup

Blueberry, strawberry jam, cocoa. A medium, syrupy body. The acidity is bright but round, more ripe berry than lemon, and the cup stays sweet down to the last cold mouthful.

How we brew it

A cone dripper brings out the fruit.

  1. Grind 15 g of coffee medium-fine, about like table salt.
  2. Heat the water to 94 °C and rinse the paper filter.
  3. Pour 40 g of water to bloom and wait 40 seconds.
  4. Pour slowly in circles to 240 g in total (a ratio of 1:16).
  5. Let it drain. The whole brew takes about 3 minutes.

If it tastes sour, grind a little finer; if it tastes dry and bitter, grind a little coarser.
