Red grape, grapefruit and cane sugar from Finca Los Dos Cerros, the Rojas family's farm near Pitalito in Huila. Pink Bourbon is an uncommon variety with pale pink cherries and a bright, sweet cup. The family ferments it for 36 hours before washing and dries it on covered beds. A medium roast (3 of 5) that works as filter and as espresso. Whole bean or ground for espresso, filter or plunger, in 250 g, 500 g and 1 kg bags.

About this product
The Rojas family has grown coffee on Finca Los Dos Cerros for three generations. Twelve years ago they planted a few rows of Pink Bourbon, a variety whose ripe cherries turn a pale salmon pink instead of red. It yields less than the varieties around it, but the cup is worth it: grape and grapefruit, with the sweetness of cane sugar. The family now grows four hectares of it, and we buy the whole of one picking each year.
We roast it a step darker than our African coffees (3 of 5), so it holds up as espresso as well as filter.

Red grape, grapefruit, cane sugar. A round, medium body. The acidity is bright and fruity, and the finish tastes of caramel.

How we brew it
As a straight espresso it tastes like a grape sweet.
- Dose: 18 g, ground fine
- Yield: 40 g in the cup (a ratio of 1:2.2)
- Time: 27 to 30 seconds
- Water: 93 °C
If the shot tastes sharp, grind a little finer to slow it down.
